Ingredients
  • 1 tablespoon sugar (or less if that sounds like a lot of sweet)
  • 3 tablespoons or more of fresh lime juice (I usually end up using more)
  • 2 1/2 cups kohlrabi, peeled and shredded (I just shoot it through the food processor)
  • 1 or more garlic cloves - minced
  • 1 1/2 tablespoons fish sauce
  • 1/2 teaspoon or more crushed red (dried) chili peppers
  • cherry tomatoes - halved
  • 2 tablespoons toasted crushed peanuts or almond slivers (Optional)
  • salt and pepper to taste

Directions
  1. Mix sugar, garlic, fish sauce, red pepper and the lime juice.
  2. introduce tomato halves and slightly smash them with a fork or potato masher.
  3. pour mixture over shredded kohlrabi and toss.
  4. salt and pepper and sprinkle nuts over the top and pop it in the fridge to "marinate". Toss it again before serving.
  5. shredded carrots can be substituted for the tomatoes.
  6. the longer this stuff sits the hotter and tastier it becomes - you may want to experiment with the amount of red pepper and garlic if you are sensitive to fire...Some like it hot...all ingredients can be adjusted to personal taste.
  7. PHOTO DEPICTION: made with shredded carrots and green onion garnish - no peanuts.

It sounds great never really saw a recipe with kohlrabi. I always just eaten it raw with a littel salt

My dad used to grow it and I don't remember ever doing anything with it either! The texture of the kohlrabi is perfect for this treatment.
