CARNE CARNIVAL This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cullen Estate in Allen, Texas in 1984.

Ingredients
  • 3-1/4 pound beef filet
  • 1/2 cup red wine
  • 1/3 cup light corn syrup
  • 2 tablespoons crushed black peppercorns
  • 2 teaspoons salt
  • 1 tablespoon dried thyme
  • 1 tablespoon dried tarragon
  • 1 tablespoon dried basil

Directions
  1. Roll beef and tie to form a cylinder shaped roast then place in shallow baking pan.
  2. Pour wine over top then brush corn syrup on all sides of beef.
  3. Sprinkle seasonings over beef making sure to coat all sides.
  4. Cover and allow to marinate 1 hour at room temperature.
  5. Preheat oven to 400 then uncover meat and bake 45 minutes.
  6. When cooked transfer to a carving board and allow to rest for 10 minutes before slicing.
