Shrimp Regatta Recipe
This is a recipe from the Southern Yacht Club in New Orleans which is the second oldest yacht club in the United States.

Ingredients
  • 1 stick butter
  • 16 oz. sliced white mushrooms
  • 2 pounds medium shrimp, peeled
  • 4 cloves garlic, finely minced
  • 2 Tbsp Italian flat leaf parsley, chopped
  • 3 green onions, thinly sliced

Directions
  1. Melt butter in large saute pan.
  2. Add mushrooms and saute until lightly browned.
  3. Add the rest of the ingredients and stir.
  4. Cover to preserve juice.
  5. Saute for 5 minutes or until shrimp are pink, stirring a few times.
  6. Serve immediately with crusty bread for "soppin' up the juice".
