Ingredients
  • 3 cups shredded unpeeled zucchini (4 small) (drained)
  • 1 cup Original Bisquick® mix
  • 1 medium onion, finely chopped - 1/2 cup
  • 1/2 - 3/4 cup grated Parmesan cheese
  • 2 Tbsp. fresh parsley, chopped
  • 1/2 tsp. seasoned salt
  • 1/2 tsp. dried oregano leaves
  • pepper to taste
  • 1 garlic clove, minced
  • 1/2 cup vegetable oil
  • 4 eggs, slightly beaten

Directions
  1. Heat oven to 350ºF.
  2. Grease the bottom and sides of a rectangular 13 x 9 x 2 inch pan.
  3. Stir together all ingredients.
  4. Spread in pan.
  5. Bake about 25 minutes or until golden brown.
  6. Cut into 2 inch squares and cut squares diagonally in half into triangles.
  7. High altitude oven temperature should be set at 375ºF.
