Creamy Polenta Recipe
This polenta recipe is so simple and tastes so good.

Ingredients
  • 2 cups water
  • 2 cups chicken / vegetable broth
  • Salt to taste (not necessary if you are using store bought broth)
  • Note: I like to add 1- 2 minced garlic cloves to the liquid but that's because I LOVE garlic.
  • 1 cup medium-grain yellow polenta
  • 4 Tbsp. butter
  • 1 cup cream cheese

Directions
  1. Heat water and chicken/vegetable broth lightly seasoned with salt to a boil over high heat, about 5 minutes.
  2. Quickly whisk in the polenta until fully incorporated.
  3. Lower the heat to a low simmer, add butter and allow the polenta to cook, stirring occasionally for 30 minutes.
  4. Finish by stirring in the cream cheese.
  5. If preparing in advance, cool, cover and refrigerate.
  6. Reheat in the microwave, for about 5 minutes on high, just before serving. Stir vigorously after reheating to fluff.
  7. Serves 6.
