Ingredients
  • 1 pound of black beans
  • 1 pound of smoked sausage
  • 1 pound of carne seca or 1/2 pound of bacon
  • 1 pound pork shoulder cubed
  • 2 small onions
  • 2 garlic cloves
  • 2 large bay leaves
  • 2 cups of beef stock
  • olive oil
  • salt and fresh pepper
  • very hot pepper sauce

Directions
  1. Wash beans well and then leave them
  2. soaking in 1 liter of water overnight. On the
  3. next day, cook the beans and water on low
  4. heat for about an hour with the beef stock.
  5. While the beans are cooking, cut the meats
  6. into bite size chunks, put them all in a pan,
  7. cover them with water and boil them for
  8. about ten minutes.
  9. Chop the onions and the garlic finely and mix
  10. in random herbs and spices (a spice mix for
  11. salads would work well here). Heat three
  12. spoons of oil in a frying pan and fry the onion
  13. mixture until it caramelizes. Add a ladle full
  14. of beans (which at this point should be soft)
  15. and mash it together with the fried onion
  16. mixture. Put the bay leaves into this mush
  17. and let it fry for a few minutes. Pour
  18. everything back into the beans.
  19. Put the strained meats into the beans and
  20. add a cup of water. Stir.
  21. Add salt and hot pepper sauce to taste.
  22. Serves 5 over rice.
  23. Notes: While the beans are cooking, stir
  24. them occasionally because if they burn on
  25. the bottom, the whole dish will be
  26. contaminated. Also, do not add salt to the
  27. beans until the meats have been in it for a
  28. while as these will tend to release their salt
  29. into the water. The Feijoada will be ready
  30. when the liquid is thick and flavorful
