Apple Walnut Banitza From Bulgaria Recipe
A friend of mine found this recipe from Barbara Rolek at About.com and I make for the family. It is very good and we have one like it back home.

Ingredients
  • 1 cup finely chopped walnuts
  • 1 cup sugar
  • 1-1/2 teaspoon cinnamon
  • 3 tablespoon bread crumbs
  • 18 sheets filo dough, thawed
  • 8 ounces (2 sticks) butter, melted
  • 4 Golden Delicious or Gala apples, peeled, cored and grated
  • you can also use the pumpkin pie filling for these

Directions
  1. Heat oven to 400 degrees.
  2. Mix walnuts, sugar, cinnamon, bread crumbs and set aside.
  3. Place one sheet filo dough on parchment paper or a tea towel.
  4. Brush lightly with butter.
  5. Repeat 2 more times so there are 3 layers of filo.
  6. Portion out 1/5th of the walnut mixture on the entire surface of the filo.
  7. Then, place 1/5th of the apples in a 1/2-inch-wide strip along the short edge and 1/2 inch away from the sides.
  8. Fold up bottom edge first, then sides, and then roll away from yourself, using the parchment paper or towel to help, until you have a tight cylinder.
  9. Brush lightly with more melted butter and sprinkle with extra sugar, if desired.
  10. Repeat with remaining filo dough. Place banitzi on a parchment-lined pan and bake for 20 minutes or until golden brown and crispy. Serve warm or at room temperature with whipped cream or sour cream and apple sauce.

Good afternoon borinka, I had something like this at a Russian bakery in Seattle, Wash. a few years ago. I truly enjoyed it. Not to mention I had to wait 30 minutes to make my order, that is how busy the bakery was. You have my 5 on this one. Have a wonderful day...Cheryl
