Ingredients

2 cups dry barilla wheat rotini (approximate amount)

8 cherry tomatoes, halved

1 small yellow zuchinni, cut lengthwise ad then sliced

1 tbs capers

1 tbs chopped roasted red pepper ( I used the jar kind that taste tangy)

3 tbs olive oil

salt and pepper

1 tsp dry parsley

1 tbs margarine

dash of red pepper flakes(optional)

drizzle of olive oil

more salt and pepper over the top to adjust the taste from the added pasta

Directions

prepare pasta until al dente and drain

meanwhile sautee tomatoes, zuchini, capers, and roasted red pepper in olive oil until zuchinni is tender (over low heat until pasta is done)

season with salt and pepper

stir in pasta and increase the heat slightly

sprinkle parsley

add margarine and dash of red pepper flakes if using

drizzle a little olive oil over the top and stir to mix all the flavors

season with extra salt and pepper to suit your taste
