Holiday Eggnog Cheesecake Recipe

Ingredients
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 teaspoon ground or freshly grated nutmeg
  • 1/4 cup butter, melted
  • Preheat oven to 325 degrees F (165 degrees C).
  • In a medium bowl combine 1-1/4 cup graham cracker crumbs, 1/4 cup sugar, 1/4 tsp. nutmeg and 1/4 cup butter.
  • Press into the bottom of a 9 inch spring form pan.
  • Bake in a preheated 325 degree F (165 degree C) oven for 10 minutes. Place on a wire rack to cool.
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 1 8-ounce package Philadelphia brand cream cheese, softened
  • 1/4 cup sugar
  • 1 cup eggnog
  • a dash or a splash of Rum
  • 1 cup whipping cream, whipped

Directions
  1. Soften gelatin in water.
  2. Stir over low heat until dissolved.
  3. Combine cream cheese and sugar, mixing at medium speed with an electric mixer until well blended.
  4. Gradually add gelatin and eggnog, mixing until blended.
  5. Chill until slightly thickened.
  6. Fold in whipped cream.
  7. Pour over crust; chill until firm.
  8. Garnish with additional whipped cream and nutmeg, if desired.
  9. 8 - 10 servings
