Ingredients
  • 4 cups grated zucchini, drained in a sieve or on paper towel
  • 1-3/4 cups biscuit baking mix (Bisquick)
  • 3/4 cup grated Parmesan cheese
  • 1 cup shredded sharp Cheddar cheese
  • 4 eggs, beaten
  • 1/2 cup vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced or finely chopped
  • 3 Tbsp. dried parsley
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 3/4 tsp. dried oregano
  • Just a hint of freshly grated nutmeg

Directions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a mixing bowl, combine the zucchini, biscuit baking mix, Parmesan, Cheddar, eggs, vegetable oil, onion, garlic, parsley, salt, pepper, oregano and a hint of nutmeg.
  3. Spread the mixture into a greased 9 x 13 inch baking pan and bake for 25 to 30 minutes, until golden brown.
  4. Remove it from the oven and allow to completely set.
  5. Cut into small squares and serve warm with butter or cold.
  6. Makes 1 - 9 x 13 inch pan
