My mother-in-law's famous stuffed cabbage. I had to watch her to get this recipe...she didn't write anything down. Ukrainian name: holubki, also spelled galubki I think.

Ingredients
  • 1 pound ground beef
  • 1/4 pound ground pork
  • 2 t. salt
  • 1/2 t. pepper
  • 3/4 c. cooked rice
  • 1 small onion, grated *
  • 2-8 ounce cans tomato sauce, DIVIDED
  • 12 large cabbage leaves, slightly softened in boiling water
  • 2 T. oil
  • 1 egg (a variation of hers)
  • 1/4 c. brown sugar
  • 1/4 c. lemon juice
  • * or chopped and sauteed in bacon grease

Directions
  1. Combine the 2 meats, salt, pepper, rice, onion and ONE CAN tomato sauce;
  2. Divide into 12 mounds;
  3. Place a mound on one cabbage leaf;
  4. Roll envelope style (once horizontally, fold sides toward center, then roll horizontally to finish off the envelope); keep it all tucked in neatly, but if a leaf rips don't worry, just pack the rolls tightly in the cooking pot and they'll stay intact pretty much;
  5. She sometimes browned the rolls in oil at this stage, but I never have;
  6. Place rolls in large pot, packing very close together;
  7. Mix ONE CAN tomato sauce with brown sugar and lemon juice;
  8. Pour over rolls;
  9. Cook, covered, for 1 to 1 1/2 hours
  10. VARIATIONS: she never did it the same way twice. Sometimes used catsup, vinegar, more onions, so whatever you do, you'll be fine.

Great recipe, something a bit different, I like a good stuffed cabbage. I think that the cabbage is very under rated. It is good, tasty, versatile and stays with you.

Alterations


I usually put some of the cabbage leaves not suited for stuffing in the bottom of the roaster and put half can of saurkraut on top of that then some stuff cabbage and top with the saurkraut then pour tomato mixture over all.We like it with the saurkraut.
They are delicious.


Yes, I vaguely remember my mother-in-law using sauerkraut. I think that would be great. This recipe likes some acidic component. I also like your idea of using the leftover cabbage leaves. Great! Thanks!
