TEX MEX Carnitas

- pork loin or pork butt roast shopping list
- 1 can of pepsi/Coke shopping list
- 1 can green chilis shopping list
- 4 cloves garlic shopping list
- 1 onion cut into quarters shopping list
- 1 jalepeno, deseeded and cut into halfs shopping list
- 1 can chicken broth shopping list
- salt and pepper to taste shopping list
How to make it
- cut pork roast or loin into 2+ pieces
- add pork, chilis, onion, jalepeno, pepsi/coke, onion, chicken broth and salt/pepper to pot,
- cook on stove for 3-4 hours
- remove from heat
- preheat oven to 350 degrees
- spoon out (with slotted spoon) meat and put into a roasting pan
- shred/pull apart meat slightly
- save broth from pot.
- Cook meat in oven for 30-45 mins so it's slightly crispy
- remove from oven and spoon broth mixture over meat.
- serve with corn or flour tortillas and sides such as salsa, guac. etc.
