Ingredients
  • 2 to 3 pound potatoes, cubed (peels on or off)
  • 1/4 cup butter, melted
  • 1 tablespoon garlic, chopped
  • 1 teaspoon salt, optional
  • 1 tablespoon Parmesan cheese, optional
  • 1 tablespoon lemon, optional
  • 3 cups cooked meat, diced (or however much you have)
  • 3 cups cooked veggies (or however much you have or add in fressh diced veggies, or frozen veggies)
  • 1/2 onion, diced, optional

Directions
  1. Combine all the potatoes, meat, onion, garlic and veggies in a large bowl. Combine the butter, spices, cheese, and lemon.
  2. Drizzle over the potatoes and stir to coat.
  3. Spread onto a jellyroll style pan or in a 9 x 13-in pan.
  4. Bake 350*F for 30 minutes covered, then uncover and continue to bake for 15 minutes.

I like the idea of roasting the hash instead of frying it - that would really develop the flavors and give the veggies a nice sweetness. Great idea! - Natalie
