Apricot Tortilla Delights Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Griffith Estate in Hurst, Texas in 1981.

Ingredients
  • 1 teaspoon grated orange peel
  • 1/4 cup sugar
  • 1/2 cup ricotta cheese
  • 8 ounces cream cheese softened
  • 6 flour tortillas
  • 1/2 cup apricot preserves
  • 1 egg lightly beaten
  • 2 tablespoons butter melted
  • Apricot Sauce:
  • 3/4 cup apricot preserves
  • 1 cup sliced fresh apricots

Directions
  1. Preheat oven to 500 then lightly grease jelly roll pan.
  2. With two wooden spoon thoroughly combine peel, sugar, ricotta, and cream cheese.
  3. Spoon 1/4 cup of mixture onto center of each tortilla then top with 1 tablespoon preserves.
  4. Fold one end of tortilla about 1-1/2" over filling.
  5. Fold left and right sides over folded end overlapping them then fold remaining end down.
  6. To seal brush edges with egg and pinch closed.
  7. Brush each pastry with butter then place seam side down on baking sheet.
  8. Bake 10 minutes until filling is hot and edges begin to brown
  9. Place preserves in microwavable bowl and heat on high for 1 minute then stir in apricots.
  10. Serve drizzled over pastries.
