Brown in hot fat for 15 to 20 minutes. Season with salt and pepper. Add 1 cup water. Cover tightly and simmer 2 hours or until tender. Worcestershire sauce or A-1 sauce can be added while cooking.
About 1 hour before roast is done, potatoes, carrots, and onions may be added (sprinkle with salt). Check roast several times to make sure it doesn?t burn. Remove from pan, and skim excess fat off broth.
GRAVY Mix 2 tablespoons flour with 1/4 cup cold water. Stir slowly into hot broth and boil 1 minute, stirring constantly. Season with salt and pepper.
