I have a few in the house who like coconut and tell me these were good cookies (coconut is not my favorite).

Ingredients
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • Pinch salt
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • 1 1/2 cups toasted coconut (toast unsweetened coconut 350* for 10-15 minutes)

Directions
  1. In a large bowl, sift together the flour, baking soda, baking powder and salt.
  2. Cream together the butter and sugars. Beat in the egg and extracts.
  3. Stir the flour mixture into the butter mixture, then mix in the coconut.
  4. Drop by teaspoonfuls onto baking sheets, bake 8-10 minutes until cookies are light brown. Cool for 2 minutes and transfer to wire racks.
