Ingredients
  • 1 1/4 cups oatmeal
  • 1 1/4 cups brown sugar
  • 1 1/4 cups flour
  • 1 1/4 sticks butter
  • 4 1/2 cups cut-up rhubarb
  • 1 1/4 cups water
  • 1 1/4 cups white sugar
  • 2 tablespoons cornstarch

Directions
  1. Crumble together the oatmeal, brown sugar, flour and butter. Reserve 1 cup. Press the remaining mixture into a 9x13 baking pan.
  2. Layer the rhubarb on the crust.
  3. Bring the water, sugar and cornstarch to a boil in a small saucepan. Dribble hot sauce over the rhubarb.
  4. Sprinkle the reserved crumble mixture over the top of the rhubarb.
  5. Bake 1 hour at 375*F.
  6. Variations:
  7. Use apples and add cinnamon
  8. Use Cherry Pie filling and won't need the sugar sauce
  9. Use tart cherries

Sound Great, Only a couple more months and we should have some nice fresh rhubarb here so I can give it a try!
