Rich Shortcrust Pastry Recipe
Easy and beautiful Pastry can be adapted for savoury do by leaving out the icing sugar.

Ingredients
  • 200g of Plan Flour sifted
  • 100g butter diced
  • 50g of icing sugar sifted
  • Finely grated rind of one lemon or lime
  • 1 egg yolk beaten
  • 3 tbps milk

Directions
  1. Place the flour and butter into a bowl and rub the butter into the flour.
  2. Mix in the remaining ingredients.
  3. Knead briefly on a lightly floured work surface, then leave to rest for 30 mins.
  4. This amount of pastry is enough to line the base of a flan dish.
  5. For a pie double the quantities.
  6. The result when cooked is melt in the mouth shortcrust pastry.
