Chicken Breasts Breaded Recipe
I love chicken prepared this way. It's so tasty and it's great to take along on picnics too.

Ingredients
  • 6-8 boneless chicken breasts
  • 2 large eggs, beaten
  • 1/4 cup milk, 2% or homogenized
  • 1/2 cup flour
  • 1-1/2 cups seasoned bread crumbs
  • 1/2 cup freshly grated Romano or Parmesan cheese
  • 2 Tbsp. dried basil
  • 2 tsp. powdered garlic
  • 2 tsp. paprika
  • 1 tsp. salt
  • 1 tsp. freshly grated black pepper
  • 1/2 cup. vegetable oil

Directions
  1. In a small shallow dish/plate mix breadcrumbs, cheese, basil, garlic, paprika, salt and pepper.
  2. In another shallow dish beat eggs and milk together.
  3. Place flour in a third shallow dish/plate.
  4. Dip the chicken in flour to coat.
  5. Then dip in beaten egg and next breadcrumb mixture.
  6. Set aside.
  7. In a large skillet heat oil.
  8. Fry chicken for 8-10 minutes on both sides or until golden brown.
  9. Place chicken breasts on paper towel to absorb excess oil.
  10. For garlic and onion cream sauce.
  11. Saute a bunch of chopped long green onions and some chopped garlic in 2 tablespoons butter and 1 tablespoon EVOO. I like to toss in a handful of pitted and chopped Kalamata olives. Add a half a cup chicken broth and 1 cup heavy whipping cream and stir until bubbly. Pour over chicken and serve.
