This lovely shortbread recipe is a favourite no-fail recipe.

Ingredients
  • 2 cups all-purpose flour (500 mL)
  • 1/2 cup Icing (confectioners') sugar (125 mL)
  • 1 cup butter (not margarine), cut up (250 mL)
  • Note: I like to add 1 tsp. pure vanilla extract or 1/2 tsp. almond extract

Directions
  1. Combine flour and icing sugar in large bowl.
  2. Cut in butter until mixture resembles fine crumbs.
  3. Press mixture together to form smooth ball.
  4. Press evenly in ungreased 9 x 9 inch (22 x 22 cm) pan.
  5. Prick entire surface of dough with fork through to bottom of pan.
  6. Bake in a preheated 300°F (150°C) oven for 50 to 60 minutes until just lightly golden.
  7. Let stand in pan on wire rack for 5 minutes.
  8. Cuts into 36 squares.
  9. Note: I like pressing this into a Pyrex pie plate and cutting lines on the surface.
  10. 1 square: 81 Calories; 5.5 g Total Fat (1.6 g Mono, 0.2 g Poly, 3.4 g Sat); 15 mg Cholesterol; 7 g Carbohydrate; trace Fibre; 1 g Protein; 55 mg Sodium
