Chicken Vegetable Harvest Recipe
The original recipe is from Birdseye and they titled it as 'Country Harvest Casserole'. I have altered it somewhat.

Ingredients
  • 3 teaspoons olive oil
  • 3 skinless chicken fillets, sliced
  • 1 leek, rinsed well and chopped
  • 1 celery rib, 1/2 inch slices
  • 2 garlic cloves, minced
  • 420g can cream of chicken / cream of mushroom soup
  • 1/3 cup or a splash more white wine
  • 500g packet frozen Birds Eye Country Harvest Peas, Carrots and Cauliflower
  • 4 cups mashed potatoes for serving along side
  • Fresh parsley coarsely chopped for garnish

Directions
  1. Heat oil in a large frying pan.
  2. Add chicken and stir-fry for 8-10 minutes until lightly browned.
  3. Add sliced or chopped leek, celery and minced garlic and cook for another 5 minutes until tender.
  4. Pour in soup and wine.
  5. Stir in frozen vegetables, cover and simmer for 15 minutes, stirring occasionally.
  6. Serve over mashed potato and garnish with parsley.
  7. Hint:
  8. For a Vegetarian dish omit chicken and substitute soup with cream of asparagus, celery or mushroom. Omit mashed potato and serve in large warmed vol-au-vents.
