Ingredients
  • 1 pound calico beans (see note 1)
  • water to cover by 2"
  • 8 cups of water or broth or combination
  • ham bone and ham (I use leftovers that I put into the freezer)
  • or kielbasa, beef stew meat, etc.
  • carrots, celery, onions, peppers, etc (if desire)
  • 2 teaspoons onion powder
  • 1 tablespoon dried parsley
  • 1 teaspoon paprika
  • 1 t. celery seed
  • 2 bay leaves
  • 1 tablespoon garlic powder
  • 1/2 teaspoon pepper
  • pinch red pepper
  • salt, if needed (will need if using beef)

Directions
  1. Soak Method 1:
  2. Put the beans in your pot or slow cooker. Cover with enough water so that it is 2' above the beans. Soak over night. When ready to make the soup, drain the water and put the beans back in the pot or slow cooker.
  3. Soak Method 2: (Quick Method)
  4. Put the beans in a pot on the stove. Cover with enough water so that it is 2" above the beans. Bring the water and beans to a boil. Turn off the heat and put on the cover. Allow to soak for 1 hour. When ready to make the soup, drain the water and put the beans back into a pot or into your slow cooker
  5. Making the soup:
  6. If using ground beef, pre-brown. If using stew meat, brown. If using kielbasa or ham, cut into bite size pieces.
  7. Add 8 cups of water or broth to the beans.
  8. Add the meat.
  9. Add in any vegetables (carrots, celery, peppers, onions) you like. I usually saute them before adding. I like the flavor. But you don't have to.
  10. Stir in the seasonings.
  11. Set the slow cooker on low for 4-6 hours, on high 3-4 hours.
  12. On the stove, simmer on low for 3 hours.
  13. About a half hour before serving you should take out the ham bone and remove the meat and put the meat back into the pot.
  14. Note: You can put together your own calico bean mix by combining equal portions of the beans you like. My mix has: green split peas, yellow split peas, great northern beans, navy beans, red kidney beans, lentils, barley, black beans, pinto beans, lima beans, and large lima beans (butter beans).
  15. Note 2: I see soup recipes as a starter. Add and delete things to your taste. If you like spice - add chili powder and more red pepper. If you like the tomatoes, add a can of tomatoes and maybe a pinch of sugar. I haven't tried adding potatoes, but that might be good. Put in corn, and etc. I have used brats. You could use Italian sausage or chorizo. Make it your own flavors.

I often like to make soup recipes without tomatoes. Beans are among my favorite soup ingredients slow cooked is the best way to produce a nice Calico Bean Soup.
