Ingredients

How to make it

  • Whisk the flour, baking powder and salt .
  • Beat the eggs and sugar until string dropping consistency .
  • Add the vanilla essence and mix well .
  • Fold the flour in .
  • Mix the butter in .
  • Chill .
  • Pre heat the 190 deg C .
  • Grease the muffin pan well .
  • Pour a tbsp of the batter into the mould , at the centre .
  • Do not flatten it .
  • Bake for 7 mins until golden and the centre springy .
  • Cool it .

    PS -- buy a madeleine pan. You are worth it!!! It will make the prettiest cookies, shell-shaped with pretty flutes.

    Nicely done. As you say, ideal for a very civilized tea. I say - serve the tea in an antique pot, use some sterling, and show off a beautiful experience because lovely madeleines are worth the effort.
