Madeleines

- 1/2 C butter , melted shopping list
- 1 C self raising flour , sifted shopping list
- Pinch of salt shopping list
- 1 tsp baking pwd shopping list
- 2 L eggs shopping list
- 1/2 C sugar shopping list
- 1 tsp vanilla essence shopping list
How to make it
- Whisk the flour, baking powder and salt .
- Beat the eggs and sugar until string dropping consistency .
- Add the vanilla essence and mix well .
- Fold the flour in .
- Mix the butter in .
- Chill .
- Pre heat the 190 deg C .
- Grease the muffin pan well .
- Pour a tbsp of the batter into the mould , at the centre .
- Do not flatten it .
- Bake for 7 mins until golden and the centre springy .
- Cool it .

Nicely done. As you say, ideal for a very civilized tea. I say - serve the tea in an antique pot, use some sterling, and show off a beautiful experience because lovely madeleines are worth the effort.

PS -- buy a madeleine pan. You are worth it!!! It will make the prettiest cookies, shell-shaped with pretty flutes.
