Honey Roasted Red Potatoes
- 1/2 lb red potatoes, quartered
- 1 tabsp diced onion
- 1 tabsp butter, melted
- 1 1/2 tsp honey
- 1/2 tsp dry mustard
- Salt, to taste
- Black pepper, to taste
How to make it
- Preheat oven to 375 and lightly coat pan with cooking spray. Place potatoes in a single layer and top with onions.
- In a bowl, combine butter, honey, mustard, salt, & pepper and pour over the potatoes.
- Bake for 35 minutes, stirring once.
