Slow Cooker Pulled Beef Roast Recipe
This is so good and the meat is so tender it makes me drool just typing the recipe. You can add potatoes and carrots to the slow cooker if you want and they add to the flavor.

Ingredients
  • 4-5 lbs. beef chuck roast
  • Note: You can also use a pork roast.
  • 1 ounce package of OXO or Italian salad dressing mix
  • 1-1/2 cups beer
  • Note: I sometimes add a BIG splash of my favorite store bought BBQ sauce.
  • 1 large onion, peeled and coarsely chopped
  • 2 - 3 garlic cloves, peeled and coarsely chopped
  • 1 green bell pepper, washed and coarsely chopped
  • 8 kaiser buns, onion buns or burger buns, split

Directions
  1. Place the roast into a slow cooker and season with OXO or Italian dressing mix.
  2. Toss in onion and garlic and pour the beer over everything.
  3. Cover and cook on High for 6 to 7 hours.
  4. During the last hour, test the meat to see if it can be shredded. If not, then allow it to cook until you can.
  5. Add chopped bell peppers during the last hour of cooking.
  6. Serve on your favorite rolls.
