Ingredients
  • 1/4 Cup Olive oil
  • 1 Clove Garlic,chopped
  • 3 Onions,sliced
  • 4 Green Peppers,cut into 1/8's
  • 1 Medium Eggplant,unpeeled,sliced 1/4" thick
  • 2 Cloves Garlic,sliced
  • 4 Small Zucchini,sliced
  • 4 Tomatoes,sliced
  • 1 teaspoon Salt
  • 1/4 teaspoon Fresh Ground Pepper

Directions
  1. In baking dish,heat oil and add the garlic.
  2. When it is bubbly,add layers of vegetables as so:
  3. Onion,peppers,eggplant,garlic,zucchini and tomatoes.
  4. Sprinkle each layer with the salt and pepper.
  5. Cover and bake in a slow oven at 275 degress for about 40 minutes or until vegetables are soft.
  6. Remove cover and raise temperature to 500 degress and cook about 5 minutes or until the liquid is reduced and the ratatouille is thick.
  7. Some may call this a badly made stew ,but I think it is merveilleux!
  8. You can serve this Hot or Cold.
  9. Hot as a side dish or a main dish,with crusty bread,drink(I would choice the stomping of the grape myself) and a dessert.
  10. Cold as a first course,and a salad if you cook it longer with olive oil and a splash or two of fresh lemon juice,also great to fill an Omelet.
