How to make it

  • In baking dish,heat oil and add the garlic.
  • When it is bubbly,add layers of vegetables as so:
  • Onion,peppers,eggplant,garlic,zucchini and tomatoes.
  • Sprinkle each layer with the salt and pepper.
  • Cover and bake in a slow oven at 275 degress for about 40 minutes or until vegetables are soft.
  • Remove cover and raise temperature to 500 degress and cook about 5 minutes or until the liquid is reduced and the ratatouille is thick.
  • Some may call this a badly made stew ,but I think it is merveilleux!
  • You can serve this Hot or Cold.
  • Hot as a side dish or a main dish,with crusty bread,drink(I would choice the stomping of the grape myself) and a dessert.
  • Cold as a first course,and a salad if you cook it longer with olive oil and a splash or two of fresh lemon juice,also great to fill an Omelet.
