- 1/4 Cup olive oil shopping list
- 1 clove garlic,chopped shopping list
- 3 onions,sliced shopping list
- 4 green peppers,cut into 1/8's shopping list
- 1 Medium eggplant,unpeeled,sliced 1/4" thick shopping list
- 2 cloves garlic,sliced shopping list
- 4 Small zucchini,sliced shopping list
- 4 tomatoes,sliced shopping list
- 1 teaspoon salt shopping list
- 1/4 teaspoon fresh ground pepper shopping list
How to make it
- In baking dish,heat oil and add the garlic.
- When it is bubbly,add layers of vegetables as so:
- Onion,peppers,eggplant,garlic,zucchini and tomatoes.
- Sprinkle each layer with the salt and pepper.
- Cover and bake in a slow oven at 275 degress for about 40 minutes or until vegetables are soft.
- Remove cover and raise temperature to 500 degress and cook about 5 minutes or until the liquid is reduced and the ratatouille is thick.
- Some may call this a badly made stew ,but I think it is merveilleux!
- You can serve this Hot or Cold.
- Hot as a side dish or a main dish,with crusty bread,drink(I would choice the stomping of the grape myself) and a dessert.
- Cold as a first course,and a salad if you cook it longer with olive oil and a splash or two of fresh lemon juice,also great to fill an Omelet.
