Portage Bay Lemon Pie

- 2 large lemons shopping list
- 2 c sugar shopping list
- 4 wggs, well beaten shopping list
- Enough pastry for a two crust pie shopping list
How to make it
- Preheat oven to 450.
- Slice lemons as thin as humanly possible. Rind and all.
- Combine with sigar and mix well.
- Let stand for two hours, blending occasionally.
- Add eggs to lemons and mix well.
- Pour into pastry-lined 9" pie pan, arranging the slices evenly.
- Cover with top crust, cut slits near center.
- Bake for 15 minutes. Reduce heat to 375, and cook for 20 minutes, or until the knife comes out clean.
