Portage Bay Lemon Pie Recipe
A lemon pie that certainly looks unlike any other lemon pie.

Ingredients
  • 2 large lemons
  • 2 c sugar
  • 4 wggs, well beaten
  • Enough pastry for a two crust pie

Directions
  1. Preheat oven to 450.
  2. Slice lemons as thin as humanly possible. Rind and all.
  3. Combine with sigar and mix well.
  4. Let stand for two hours, blending occasionally.
  5. Add eggs to lemons and mix well.
  6. Pour into pastry-lined 9" pie pan, arranging the slices evenly.
  7. Cover with top crust, cut slits near center.
  8. Bake for 15 minutes. Reduce heat to 375, and cook for 20 minutes, or until the knife comes out clean.

I have a recipe like this as well. I have not made it. It was a shaker recipe. Thanks for posting.


Yup, this is the Shaker lemon pie. I've always wanted to try it because it's supposed to be wonderful. Well, no time like the present, huh? :-)
