Stuffed Pork Loin
Ingredients
- 3-4 lbs pork loin
- 1 cup Havarti cheese (sticks)
- 1-2 jalapeno peppers (chopped)
- Pepper (preferably fresh ground)
- 2 tbls Basil (fresh if possible)
- Butcher's string
How to make it
- Butterfly the pork loin (cut it almost in half) and cut evenly spaced slits down its length
- Place cheese and jalapenos in the slits
- Roll the pork loin back up and tie ensuring ends are closed
- Place in roasting pan and sprinkle basil on top and pepper to taste
- Cover and place in oven at 350F for 18-20 minutes per pound
