Ingredients
  • 2 cups canned water-pack sour cherries, drained, reserve liquid
  • 3/4 cup sugar
  • 4 tablespoons flour, all-purpose
  • 1/8 teaspoon salt
  • 1/2 cup cherry liquid
  • 1/2 teaspoon almond extract
  • a few drops of red food coloring
  • 1 tablespoon butter
  • pastry for a 9-inch, two crust pie (yours or store bought)

Directions
  1. Heat oven to 425*F.
  2. Roll out half the pastry and line a 9-inch pie plate
  3. Drain cherries and reserve 1/2 cup of the juice
  4. Mix together sugar, flour, and salt in a saucepan
  5. Gradually add the 1/2 cup cherry juice; mix until smooth
  6. Cook over moderate heat, stirring constantly, until smooth and thickened
  7. Remove from heat and stir in the almond extract and red food coloring
  8. Pour into lined pie plate, dot top with butter
  9. Roll out rest of pastry and place over cherries
  10. Trim and flute edge
  11. Bake 35 to 40 minutes or until crust is brown
