How to make it

  • hear half the oil over medium heat
  • Add shallots and garlic and cook for 3 minutes over low heat
  • add the brandy and cook for 30 seconds
  • Remove shallots from pan and set aside
  • Return pan to stove over high heat
  • Add remaining oil and when hot add the watercress
  • Cook for a minute over high heat
  • Add the hot fettuccine to pan and reduce the heat to low
  • Add garlic and shallots and toss well and season
  • Serve with the parmasan cheese
