fettuccine and fresh watercress

- 50mls olive oil shopping list
- 4 shallots peeled and chopped shopping list
- 2 garlic cloves peeled and crushed shopping list
- 30 mls brandy shopping list
- 1 bunch watercress wahed and crushed shopping list
- 450 mls fettucchini drained and cooked al dente shopping list
- salt and pepper shopping list
- parmasan cheese grated shopping list
How to make it
- hear half the oil over medium heat
- Add shallots and garlic and cook for 3 minutes over low heat
- add the brandy and cook for 30 seconds
- Remove shallots from pan and set aside
- Return pan to stove over high heat
- Add remaining oil and when hot add the watercress
- Cook for a minute over high heat
- Add the hot fettuccine to pan and reduce the heat to low
- Add garlic and shallots and toss well and season
- Serve with the parmasan cheese
