Ingredients
  • 50mls olive oil
  • 4 shallots peeled and chopped
  • 2 garlic cloves peeled and crushed
  • 30 mls brandy
  • 1 bunch watercress wahed and crushed
  • 450 mls fettucchini drained and cooked al dente
  • salt and pepper
  • parmasan cheese grated

Directions
  1. hear half the oil over medium heat
  2. Add shallots and garlic and cook for 3 minutes over low heat
  3. add the brandy and cook for 30 seconds
  4. Remove shallots from pan and set aside
  5. Return pan to stove over high heat
  6. Add remaining oil and when hot add the watercress
  7. Cook for a minute over high heat
  8. Add the hot fettuccine to pan and reduce the heat to low
  9. Add garlic and shallots and toss well and season
  10. Serve with the parmasan cheese
