Ingredients
  • 8 oz Dried Apricots,quartered(about 1-2/3 cups)
  • 2 Cups Water
  • 3/4 Cup Sugar
  • 2 Cups Vodka
  • 1 Cup Brandy
  • 2" Stick Cinnamon,broken
  • 1/4 teaspoon Cardamom Seed

Directions
  1. In saucepan combine apricots and water.
  2. Bring to boiling,reduce heat,cover and simmer about 15 minutes or until fruit has absorbed as much water as possible.
  3. Cool.
  4. Combine fruit mixture and sugar.
  5. Pour into 1/2 Gallon screw-top glass jar.
  6. Add vodka,brandy,cinnamon stick,and cardamom seed.
  7. Cover tightly and shake well.
  8. Let stand at room temperature for 2 weeks to ripen and ferment.
  9. Inverting jar once each day to completely dissolve suger and marry flavors.
  10. Strain through cheescloth into a crystal decanter.
  11. Reserve apricots to spoon over ice cream,or pound cake.
  12. Cover the aperitif and store in cool place.
  13. Serve the aperitif chilled in Crystal Cordial glasses.
  14. Note: a drink to take before a meal to stimulate the appetite.
