Cherry Cream Cheese Salad Recipe
There is a salad my family has always made at the holidays using pineapple and lime gelatin. I am not a fan of pineapple, so this year I decided to make my own version.

Ingredients
  • 1 can Cherry pie filling
  • 1/2 cup water
  • 2 small cherry gelatin
  • 1 - 8 ounce cream cheese, softened
  • 2- 8 ounce Non-Dairy whipped topping

Directions
  1. Combine the cherry pie filling and water in a saucepan and bring to a boil. Stir in the cherry gelatin until dissolved.
  2. Remove from the heat and pour into a large bowl. Set the bowl in the freezer. Allow the gelatin to set. Check it about every 15 minutes.
  3. In a small boil, beat the cream cheese until smooth.
  4. Beat the cream cheese into the set gelatin.
  5. Fold in 1 1/2 cartoons of whipped topping.
  6. Spread into a 9" x 13" glass pan or baking pan.
  7. Spread the remaining whipped topping over the gelatin. Garnish with marashino cherries.
  8. Place into the refrigerator to set a couple of hours (or make it the day ahead.)
  9. You can freeze the leftover squares and just use one at a time right from the freezer or thaw to eat.
