Love corned beef in our family and here's a great recipe.

Ingredients
  • 1 (5-1/2 to 6 pound) corned beef brisket with spice package
  • 7 medium potatoes, peeled and halved
  • 1/2 to 1/4 head of cabbage, cut into wedges
  • 2 parsnips, peeled and chopped
  • 4 carrots, peeled and chopped
  • 2 celery stalks, chopped coarsely(optional because they go a bit too wilted for my liking but I enjoy the flavor they add)
  • 1 large or 2 medium onions, chopped
  • 3 - 4 cloves garlic, chopped

Directions
  1. Preheat the oven to 300 degrees F (150 degrees C) or 325 degrees F
  2. Place corned beef brisket in the middle of a large dutch oven or roasting pan.
  3. Arrange potatoes, cabbage, parsnips, carrots, onions, celery and garlic around the sides.
  4. Empty the seasoning package over the roast, and pour enough water into the pan to just about cover the potatoes.
  5. Cover with the lid or use heavy aluminum foil.
  6. Roast for 5 to 6 hours in a preheated oven until the roast is fork tender.
