Prune Company Cake Recipe
This is an old, tried and true family favorite. I don't remember the source but it's delicious.

Ingredients
  • 2 cups all-purpose flour
  • 1-1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 eggs, beaten
  • 1 cup pitted prunes, cooked, chopped and drained
  • 1 cup chopped walnuts - optional
  • GLAZE:
  • 1 cup sugar
  • 1/2 cup butter or margarine
  • 1/2 cup buttermilk
  • 1 tablespoon light corn syrup
  • 1/2 teaspoon baking soda
  • Whipped cream

Directions
  1. In a large mixing bowl, combine the first six ingredients.
  2. Add oil, buttermilk and eggs and mix well.
  3. Fold in prunes and walnuts.
  4. Pour into a greased 13 in. x 9 in. x 2 in. baking pan.
  5. Bake at 325° or 350° for 40-45 minutes or until cake tests done.
  6. Note: Temperature depends on your oven and altitude.
  7. Remove from oven and poke holes in top of cake with a wooden skewer.
  8. FOR GLAZE:
  9. Combine sugar, butter, buttermilk, corn syrup and baking soda in a saucepan.
  10. Bring to a boil and boil for approximately 2 minutes, stirring constantly.
  11. Note: Be careful because the addition of baking soda can sometimes cause the mixture to rise more than you might think.
  12. Pour the hot glaze over the warm cake.
  13. Cool in pan.
  14. Top each serving piece with whipped cream.
