We love pasta in our family and here is a favorite all time stand by. I usually make a tomato sauce but I have also made this with a Béchamel sauce. Both ways are delicious.

Ingredients
  • 1-1/2 to 2 lbs. veal or lean ground beef or half veal and half pork
  • 1 medium onion - finely diced
  • 1/2 green bell pepper - finely diced
  • 2 garlic cloves - minced
  • 1 cup (45 gm) seasoned breadcrumbs
  • 1 tsp. (5 ml) dried oregano
  • 1/4 cup fresh parsley - chopped
  • 2 eggs, beaten
  • 1/4 cup grated Parmesan / Romano cheese
  • ground black pepper to taste
  • Sauce:
  • 2 garlic cloves - minced
  • 1/2 green bell pepper, diced
  • 1 medium onion, chopped
  • 28 oz. can (796 ml) plum tomatoes - chopped
  • 14 oz. can (400 ml) tomato sauce
  • ground black pepper to taste
  • 1 tsp. (5 ml) dried oregano
  • 1/2 lb. (250 gm) grated Mozzarella cheese for topping
  • 250 gm package cannelloni noodles (I prefer oven-ready)
  • Garnish with freshly chopped parsley or sliced green onion
  • Note: If you want to mix some ricotta cheese into the cooled meat mixture, it adds a completely different taste and texture.

Directions
  1. Preheat oven to 350°F or 180°C.
  2. Prepare filling by cooking ground beef in a little olive oil, add onion, green pepper and garlic and continue to cook until beef is cooked and onion is tender.
  3. Drain off any fat and allow to cool before adding the breadcrumbs, beaten eggs, Parmesan/Romano cheese, oregano, parsley and ground pepper.
  4. Mix well and carefully fill the cannelloni tubes.
  5. Spread a small amount of sauce over the bottom of the baking dish. This prevents the pasta from sticking.
  6. Arrange the stuffed cannelloni in a large 12" x 9" (30cmx23cm) baking dish, allowing a little space between them.
  7. To make the sauce:
  8. Sauté the onion in a little olive oil, add garlic and green pepper and cook until the onions are soft.
  9. Add the tomatoes, chopped including their liquid, along with the tomato sauce, oregano and black pepper.
  10. Bring to a boil and simmer for about ten minutes, stirring occasionally. Pour the sauce over the stuffed cannelloni.
  11. Top with Mozzarella cheese, cover dish with aluminum foil and bake for 60 minutes, removing the foil for the final 20 minutes.
  12. Serve with a fresh salad and a loaf of Italian bread.
