Ingredients
  • 2 cans corned beef
  • 1(2lb) bag sauerkraut, well drained
  • 1/2 cup dill relish
  • 1/2 cup Thousand Island dressing(this can be replaced with sour cream, if preferred)
  • 1lb white cheese(Muenster, Havarti, Mozzarella or the traditional Swiss works best), freshly shredded
  • 1lb "loaf" party rye or pumpernickel bread

Directions
  1. Combine all ingredients other than bread in large bowl.
  2. Top each piece of bread with a couple T of mixture
  3. Broil for about 5 minutes until bread is crisping around edges and topping is hot.

I've got some little "party breads" frozen that I need to use up so this will be the perfect recipe for it. I'll have to save it for when we have a gathering since I can't have much salt.


Matt thought these were very good. I used deli corned beef (1/3lb.)and decreased the rest of the ingredients to about a 1/4. Next time I will used a 1/2 corned beef and still quarter the ingredients. Matt liked these but said he would use less relish next time or increase the amount of corned beef as I said. I didn't try them as I don't like reubens. Thanks for the recipe. I posted a pic too.
