Excellent chicken stew for the cold winter chill.

Ingredients
  • 10 thighs or legs or both - skin on or removed, it's up to you
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons canola or corn oil
  • 1 medium onion, chopped
  • 2-3 garlic cloves, minced
  • 1 can (15 oz.) diced tomatoes
  • 2 - 3 medium sized carrots, thinly sliced
  • About 3/4 to 1 cup water
  • 1 chicken bouillon cube
  • 2 cups cooked Lima beans, or 2 cans butter beans, drained
  • Thinly sliced green onion or chopped parsley

Directions
  1. Rinse chicken pieces and pat dry.
  2. Sprinkle with salt and pepper.
  3. In a large skillet, heat oil over medium heat.
  4. Add chicken and cook, turning pieces, until well browned.
  5. Remove from pan.
  6. Add onion and garlic, cook until soft.
  7. Add undrained tomatoes, carrots, 3/4 to 1 cup water, and bouillon cube.
  8. Return chicken to pan, cover, and simmer for about 30 minutes.
  9. Stir in the beans and simmer until carrots and chicken are tender, about 25-30 minutes, adding more water, if needed.
  10. Garnish with green onion or parsley.
  11. Serves 6
