Chive And Parmesan French Bread Recipe
French bread with a good flavor that can be used to make crostini (to use with Marinated Salad). Makes 4 long thin crusty loaves, with a nice chewy interior. (You could make 2 large loaves or rolls. What ever shape you would like.)

  • 2 cups water, 110*F
  • 1 tablespoon yeast
  • 1 tablespoon olive oil
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 2 teaspoons dried chives
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1/2 cup parmesan cheese
  • 5 - 51/2 cups flour

Directions
  1. Sprinkle yeast and sugar over the warm water, stir. Allow to sit for about 10 minutes, until foamy.
  2. Combine 3 cups of flour, chives, garlic, parsley, parmesan cheese and salt. Stir into the water, along with the olive oil. Beat for about 2 minutes.
  3. Add 2 cups of flour until you have a stiff dough.
  4. Turn out onto a floured counter. Knead until smooth, adding flour if needed, just until it doesn't stick to your hands. Try to use no more than an additional 1/2 cup.
  5. Continue to knead until it is smooth and elastic, about 10 minutes.
  6. Place in an oiled bowl, cover and let rise until doubled in a warm place - about 1 hour.
  7. Turn dough until counter and split into 4 sections.
  8. Form into long thin loaves.
  9. Grease a baking sheet, or line with parchment or a liner. Place all four onto a large baking sheet (or use 2 sheets if you don't have large baking sheets.)
  10. Allow to rise for about 30 minutes, until almost doubled.
  11. Place an oven proof pan filled about 1/3 full of water on the bottom rack of the oven.
  12. Preheat the oven to 375*F, bake for 20-30 minutes, until golden brown and hollow sounding when tapped.
  13. Note: Leave the water filled pan in the oven until cooled down, it is very dangerous to move when hot!
  14. To make a simple crostini:
  15. Allow loaves to cool completely.
  16. Preheat oven to 350*F
  17. Slice bread into thin slices (I use directly down for appetizers and on the diagonal for more of a meal type slice)
  18. You can brush with olive oil and sprinkle with salt. You can do this without the salt or oil.
  19. Place on a baking sheet.
  20. Bake in oven until golden brown, turning once, about 5 minutes each side. Watch closely so they don't burn.
  21. Allow to cool completely and then store in an airtight container for up to 2 weeks.
