Fruit Nachos Recipe
My aunt brought this to a family gathering yesterday & it was THE hit of the party! We all devoured it like people who hadn't seen fresh fruit in months. Ah, January in New England!

Ingredients
  • Syrup:
  • 2 cups fresh raspberries
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 T lemon juice
  • 1/4 tsp salt
  • Topping:
  • 1/4 cup lemon curd
  • 3 T water
  • 1 (8oz) pkg fat-free cream cheeese, softened
  • 2 cups fresh raspberries
  • 2 cups fresh strawberries, sliced
  • 2 cups fresh blueberries
  • 2 (6oz) bags cinnamon sugar pita chips
  • 1 T confectioner's sugar

Directions
  1. Prep time includes a half hour(ish) to chill the syrup. Doesn't include the 5 minutes or so it takes to assemble the nachos.
  2. Syrup: Combine raspberries, sugar and water in a small saucepan.
  3. Bring to a boil, cook 5 minutes or until slightly thickened.
  4. Strain broth through a colander into a bowl, discard solids.
  5. Add lemon juice and salt to bowl, stir.
  6. Cover and chill.
  7. Topping: Combine curd, water, and cream cheese in a bowl and stir until smooth.
  8. Arrange pita chips in a single layer on a serving platter, drizzle cream cheese mixture evenly over the chips.
  9. Top with raspberries, strawberries, and blueberries.
  10. Drizzle with syrup, and sift powdered over the top.
  11. Serve immediately.
  12. Jump out of the path of the thundering hordes.

Not only does this sound delicious, but it also sounds like it would be a very pretty presentation as well with the different colored fruits, colorful sauce, and curd mixture. I hope to make this one when we next have company - great idea, and yes, fresh fruit in the winter months of the midwest would be a big hit, too! And what a great summer bbq appetizer. Alterations


I might try the "cream cheese" fruit dip instead of the lemon curd the *second* time I make this...lol. Mix 1 8oz pkg cream cheese with about 1/2 cup powdered sugar and about 1tsp of lemon juice.
