Fruit Nachos

- Syrup: shopping list
- 2 cups fresh raspberries shopping list
- 1/2 cup granulated sugar shopping list
- 1/4 cup water shopping list
- 1 T lemon juice shopping list
- 1/4 tsp salt shopping list
- Topping: shopping list
- 1/4 cup lemon curd shopping list
- 3 T water shopping list
- 1 (8oz) pkg fat-free cream cheeese, softened shopping list
- 2 cups fresh raspberries shopping list
- 2 cups fresh strawberries, sliced shopping list
- 2 cups fresh blueberries shopping list
- 2 (6oz) bags cinnamon sugar pita chips shopping list
- 1 T confectioner's sugar shopping list
How to make it
- Prep time includes a half hour(ish) to chill the syrup. Doesn't include the 5 minutes or so it takes to assemble the nachos.
- Syrup: Combine raspberries, sugar and water in a small saucepan.
- Bring to a boil, cook 5 minutes or until slightly thickened.
- Strain broth through a colander into a bowl, discard solids.
- Add lemon juice and salt to bowl, stir.
- Cover and chill.
- Topping: Combine curd, water, and cream cheese in a bowl and stir until smooth.
- Arrange pita chips in a single layer on a serving platter, drizzle cream cheese mixture evenly over the chips.
- Top with raspberries, strawberries, and blueberries.
- Drizzle with syrup, and sift powdered over the top.
- Serve immediately.
- Jump out of the path of the thundering hordes.
