How to make it

  • Slice chiles lengthwise into pieces 2 to 3 inches long and 1/4-inch wide.
  • Stuff squid with one piece each of Monterey Jack cheese and green chile.
  • Seal each with a toothpick.
  • Layer squid in a baking dish.
  • Sprinkle with salt and pepper, cover with tomatoes and lemon juice.
  • Bake for 20 minutes or until hot and bubbly.
