Bears California Squid Recipe

Ingredients
  • 3 pounds squid, cleaned and left whole
  • 1/2 pound Monterey Jack cheese, cut into finger-sized pieces
  • 1 can (14 ounces) whole mild green chiles
  • 1 cup canned tomatoes, cut in half and drained
  • Juice of 2 lemons
  • Salt and pepper to taste

Directions
  1. Slice chiles lengthwise into pieces 2 to 3 inches long and 1/4-inch wide.
  2. Stuff squid with one piece each of Monterey Jack cheese and green chile.
  3. Seal each with a toothpick.
  4. Layer squid in a baking dish.
  5. Sprinkle with salt and pepper, cover with tomatoes and lemon juice.
  6. Bake for 20 minutes or until hot and bubbly.
