Ingredients

How to make it

  • Finely grind the 250g of Oreo cookies. Melt the 100g of unsalted butter in the microwave or on the stove and add to the cookie crumbs. Pulse/mix till well combined.
  • Press onto the base of a loose bottomed springform pan (13x9) and push a little up the sides to create a small ridge.
  • Refridgerate the base while preparing the filling.
  • In a large mixing bowl, use an electric whisk to combine the Cream Cheese, Vanilla extract and Icing Sugar.
  • In a seperate bowl/jug, use the same whisk to give the double cream a little beat. Once it starts to thicken up, add to the cream cheese mix and whisk a little more till you have a thick, but still creamy consistency.
  • Fold in the 15 coarsely chopped Oreos till evenly spread around the mixture.
  • Pour filling over the cookie crumb base and smooth out till flat and even.
  • Finely grind the remaining Oreos for the topping (I use six for a very thin layer of crumb, but some like a thicker one so feel free to use more if you do too!) and sprinkle evenly over the filling.
  • I like to use a pastry brush to gently spread them over the filling without disturbing the cream cheese!
  • Refridgerate for 4 hours, or overnight.

Oreos, double cream... don't need to go beyond that ;-) while I do not normally subscribe to no bake cheesecakes, this one did catch my eye. Kudos to you! I especially enjoyed the Oreo dusting :-)

    take care,
    Ray
