Ingredients

2-1/2 cups all-purpose flour

1-1/2 teaspoons baking powder

1/2 teaspoon salt

1-1/2 cups sugar

1-1/2 sticks or 3/4 cup butter or margarine at room temperature

3 Eggs

3/4 cup vanilla yogurt

1 teaspoon lemon zest, grated

1 teaspoon vanilla

juice from 1 lemon

Glaze:

1/2 cup confectioners' sugar

juice from 1 lemon

Directions

Preheat oven to 350 degrees.

Beat together the butter and sugar until fluffy.

Add eggs, lemon juice, zest and extract and beat another minute.

Mix flour, salt and baking powder together.

Add flour mixture to the butter mixture and stir together with a spoon, until just mixed.

Butter a 9 x 5 inch loaf pan and spoon the mixture into the pan.

Bake for approximately 1 hour or until set.

Cool.

In a bowl, squeeze the lemon and add enough confectioners' sugar to make a thin glaze. Depending on the amount of juice from the lemon determines the amount of confectioners' sugar.

Drizzle the glaze over the loaf while it is still somewhat warm and let it set.
