Created January 2009. Cleaning up the cupboards reminds you what ingredients you have on hand. Since I didn't make the pumpkin pies for Thanksgiving, I had cans of pumpkin leftover. So, this is what I decided to put together.

Ingredients
  • 1 1/2 cups flour
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 tablespoons wheat germ
  • 3 tablespoons milled flax seed
  • 3/4 cup oatmeal
  • 1 1/2 tablespoons dry buttermilk powder (See note)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/3 cup canola oil
  • 2 eggs
  • 1/3 cup milk
  • 15 ounces solid packed pumpkins
  • 2 teaspoons vanilla extract

Directions
  1. Preheat oven to 350*F. Grease a loaf pan.
  2. Whisk together the dry ingredients.
  3. Mix together the oil, eggs and milk.
  4. Pour the wet into the dry and stir just until combined.
  5. Stir in the pumpkin and vanilla.
  6. Pour batter into the loaf pan.
  7. Bake 50-60 minutes.
  8. Note: Use 1/2 tablespoon lemon juice or vinegar and milk to measure 1/3 cup.
  9. If you like salt in your food, add 1 teaspoon salt.
