Ingredients

11 lasagna noodles, cooked and drained

1 c. dried bread crumbs

1 c. cracker crumbs

salt and pepper

2 med. eggplants, cut in 1/2" slices

2 eggs

salad oil

16 oz. mozzarella cheese

1 lg. ctn. ricotta cheese

1 (29 oz) jar meatless spaghetti sauce

1/4 c grated parm cheese

Directions

Preheat oven to 350

mix bread crumbs; season with salt and pepper, place in shallow bowl or wax paper, whatever is easier for you to stay clean

in small bowl, mix eggs with 2 teaspoons water

dip eggplant into egg mixture, then crumb mixture

fry in salad oil until brown; drain on paper towels

in a 9x13 inch pan, place layer of noodles, layer of eggplant, spread with 1/2 ricotta cheese, sprikle 1/3 of mozzarella cheese, 1/3 of spaghetti sauce. Repeat this layer.

End with noodles, sauce and parm cheese

Bake for 30 minutes at 350, or until heated all the way through.
