Ingredients
  • Cake:
  • 6 tb unsalted butter; very soft
  • 1 c sugar
  • 2 eggs; room temperature
  • 1 ts vanilla extract
  • 1 c unbleached flour
  • 3 tb cornmeal
  • 1 ts baking powder
  • 1/2 ts salt
  • 1/2 c milk
  • Topping:
  • 6 tb unsalted butter
  • 3/4 c flour
  • 3/4 c brown sugar; firmly packed
  • 1/2 ts cinnamon

Directions
  1. Preheat the oven to 350°F. Lightly butter a 9-inch cake pan.
  2. For the cake, beat the butter and sugar with an electric mixer until
  3. creamy. Add the eggs and vanilla, and beat until very smooth and fluffy, about 2 minutes.
  4. Sprinkle in the flour, cornmeal, baking powder, and salt, and beat 10
  5. seconds. Pour in the milk and beat just until the batter is evenly
  6. moistened, about 1 minute. Spoon the batter into the pan and smooth thentop.
  7. In another mediium-size mixing bowl, combine the crumb topping ingredients. Using your hands or a pastry blender, combine the mixture until it resembles fine crumbs. Sprinkle the mixture evenly over the cake batter.
  8. Bake 40 minutes, or until a knife inserted in the center of the cake comes out dry. Let the cake cool completely before serving.
