Fish In Foil Recipe
This dish calls for a bit of preparation but the vegetables can be made ahead and the dish assembled just before cooking. Serve with plain boiled potatoes. Only use fresh vegetables, not frozen.

Ingredients
  • 6 fish fillets
  • 6 small zucchini
  • 6 small carrots
  • 6 tablespoons of cream

Directions
  1. Julienne the raw carrots and zucchini, sticks about 1/8 inch thick and 2 inches long.
  2. Sauté in a bit of butter until just becoming limp. The vegetables need to keep some bite to them.
  3. Cut squares of foil big enough to fit the ingredients.
  4. Lay foil squares out.
  5. Put a portion of sauteed vegetables on each, about 3/4 cup.
  6. Lay a raw fish fillet on top.
  7. Put a tablespoon of cream on top of each fish fillet.
  8. Add freshly ground black pepper and some salt.
  9. Close packet and seal.
  10. Put on a baking tray in a medium hot oven for about 30 minutes.
  11. When cooked, put the packets on each individual plate with some boiled potatoes on the side.
  12. Warn people to watch out for steam when they open them!
