Fish in Foil

- 6 fish fillets shopping list
- 6 small zucchini shopping list
- 6 small carrots shopping list
- 6 tablespoons of cream shopping list
How to make it
- Julienne the raw carrots and zucchini, sticks about 1/8 inch thick and 2 inches long.
- Sauté in a bit of butter until just becoming limp. The vegetables need to keep some bite to them.
- Cut squares of foil big enough to fit the ingredients.
- Lay foil squares out.
- Put a portion of sauteed vegetables on each, about 3/4 cup.
- Lay a raw fish fillet on top.
- Put a tablespoon of cream on top of each fish fillet.
- Add freshly ground black pepper and some salt.
- Close packet and seal.
- Put on a baking tray in a medium hot oven for about 30 minutes.
- When cooked, put the packets on each individual plate with some boiled potatoes on the side.
- Warn people to watch out for steam when they open them!
