Cidar-Brined Chicken

- 6 cups apple cider shopping list
- 1/3 cup coarse salt shopping list
- 1 tbsp dried sage shopping list
- 1 3/4 tsp dried thyme, divided shopping list
- 3/4 tsp celery seeds shopping list
- 8 bone-in chicken thighs shopping list
- 1 large red onion, cut into 1-inch wedges shopping list
- 1/4 tsp pepper (or to your taste) shopping list
- 2 large Braeburn or granny smith apples, unpeeled, cut into 1-inch wedges shopping list
How to make it
- combine cider, salt, sage, 1 1/2 teaspoon of the thyme and celery seeds in a large nonreactive bowl; stir to dissolve salt. Add chicken; weigh down with plate to keep submerged. Cover and refrigerate 6 to 8 hours.
- Heat oven to 375 degrees F. Remove chicken from brine; discard brine. Pat chicken dry.
- Scatter onion onto rimmed baking sheet; top with chicken. Sprinkle with remaining 1/4 teaspoon thyme and pepper. Bake 20 minutes. Add apples; bak for 35-45 minutes or until chicken is golden brown and no longer pink in the center.
