How to make it

  • combine cider, salt, sage, 1 1/2 teaspoon of the thyme and celery seeds in a large nonreactive bowl; stir to dissolve salt. Add chicken; weigh down with plate to keep submerged. Cover and refrigerate 6 to 8 hours.
  • Heat oven to 375 degrees F. Remove chicken from brine; discard brine. Pat chicken dry.
  • Scatter onion onto rimmed baking sheet; top with chicken. Sprinkle with remaining 1/4 teaspoon thyme and pepper. Bake 20 minutes. Add apples; bak for 35-45 minutes or until chicken is golden brown and no longer pink in the center.
