This maked the chicken extremely moist. The reason for this is because it marinades for 6-8 hours. It combines sweetness and herbs, making it taste delicious.

  • 6 cups apple cider
  • 1/3 cup coarse salt
  • 1 tbsp dried sage
  • 1 3/4 tsp dried thyme, divided
  • 3/4 tsp celery seeds
  • 8 bone-in chicken thighs
  • 1 large red onion, cut into 1-inch wedges
  • 1/4 tsp pepper (or to your taste)
  • 2 large Braeburn or Granny Smith apples, unpeeled, cut into 1-inch wedges

Directions
  1. combine cider, salt, sage, 1 1/2 teaspoon of the thyme and celery seeds in a large nonreactive bowl; stir to dissolve salt. Add chicken; weigh down with plate to keep submerged. Cover and refrigerate 6 to 8 hours.
  2. Heat oven to 375 degrees F. Remove chicken from brine; discard brine. Pat chicken dry.
  3. Scatter onion onto rimmed baking sheet; top with chicken. Sprinkle with remaining 1/4 teaspoon thyme and pepper. Bake 20 minutes. Add apples; bak for 35-45 minutes or until chicken is golden brown and no longer pink in the center.
