Depression Cake Recipe
Here is one recipe that I had on hand for Depression Cake or War Cake. I like to add vanilla or brandy to mine but that isn't the true recipe.

Ingredients
  • 1 cup shortening
  • Note: you can also use vegetable oil but the original recipe calls for shortening
  • 2 cups water
  • 2 cups raisins, soaked to plump up
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 cups white sugar
  • 3 cups all purpose flour
  • 1 teaspoon baking soda

Directions
  1. In a saucepan combine the shortening, water, raisins, cinnamon, nutmeg and sugar. Simmer for 10 minutes.
  2. Remove from heat and let stand until cool.
  3. Preheat oven to 350 degrees F (175 degrees C).
  4. Grease a 9 x 13 inch baking pan.
  5. Stir the flour and baking soda into the cooled raisin mixture and mix until just blended.
  6. Pour batter into prepared pan.
  7. Bake at 350 degrees F (175 degrees C) for 45 minutes.
  8. Makes: 1 "9 x 13 inch" cake
