My Mom used to make this every time she made turkey to use up leftovers. They were a hit with everyone who tried them. The secret is not to rush the sauce that holds everything together.

Ingredients
  • 4 cups cooked turkey, finely chopped
  • 1/4 cup green onion, minced
  • 1/2 cup margarine
  • 1/2 cup flour
  • 2 cups vanilla soy milk
  • 1/8 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup fresh parsley, minced
  • 2 eggs
  • 2 tbsp water
  • bread crumbs

Directions
  1. Combine turkey and green onion and set aside.
  2. Melt margarine in a saucepan. Add flour and cook, stirring, until golden and thickened.
  3. Add soy milk slowly, stirring constantly until smooth. When the sauce begins to thicken, stir in salt, pepper and parsley. Continue to thicken, stirring often, until the sauce is the thickness of creamy mashed potatoes.
  4. Combine sauce and turkey mixture. Press firmly into a large casserole dish and refrigerate overnight.
  5. Beat together eggs and water.
  6. Divide refrigerated mixture into twenty croquettes, rolling each into a log about 2 1/2 inches by 1 1/2 inches.
  7. Roll each log in egg mixture and then in bread crumbs.
  8. Heat 1/2 inch of oil in a frying pan and fry the croquettes, turning once, until both sides are golden. Drain on paper towels.
