Ingredients
  • 24 - 1/4" slices (actually 28 if you count the part that came out of the top of the can)
  • 1 tablespoon shortening
  • 1/2 cup whole wheat flour
  • 1/2 cup rye flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking soda
  • 1/3 cup dark molasses
  • 1 cup milk
  • 1 tablespoon lemon juice
  • 1/2 cup currants

Directions
  1. Preheat the oven to 325 degrees.
  2. Generously grease a can - I used a 26 ounce spaghetti sauce can or a bean can of similar size would work.
  3. Combine the flour, baking soda and salt in a 4 cup measuring cup (or you can use a bowl).
  4. Combine the milk and lemon juice.
  5. Stir the molasses and milk into the dry ingredients, just until combined.
  6. Fold in the currants. (or use raisins, craisins or dried blueberries)
  7. Fill the mold or coffee can with batter. It should come up about 2/3 to 3/4 of the way. (In my can it was to the top of the ridges.)
  8. Cover the top with foil and tie securely with a string to make it airtight. (I made a slip knot. Put string around the can, put through loop and pulled tight.)
  9. Place in a deep pan (I used my large cooking pot) and fill the pan with boiling water, to come halfway up the side of the mold.
  10. Place in the preheated oven and allow to steam for 2 hours, checking the water level after 1 hour. Add more boiling water if needed.
  11. Check for doneness by sticking a skewer into the bread; it will come out clean when done.
  12. Remove string and foil and allow to cool for 1 hour before unmolding.
  13. You may need to run a long knife around the can to get it to come loose.
  14. (Mine rose about 1+" over the can, but that was no problem.)
  15. Serving ideas:
  16. just plain butter with a plate of beans
  17. top with caramelized sweetened condensed milk and whipped cream for a dessert. (This is how my Dad remembers having it in the 1940's)
  18. How to caramelize sweetened condensed milk the safe way:
  19. Put the contents of one can of sweentened condensed milk in a double boiler. Simmer on low for 1 1/2 to 2 hours, stirring occassionally until a nice caramel color.
